This protein rich egg white causes the egg to harden when boiled.<\/p>\n<p>But why does it happen so?<\/p>\n<p>When eggs are heated the proteins in the egg white are unfolded due to break of amino acids. So, as the temperature increases these unfolded amino acids form stronger covalent bonds with other protein molecules. Similarly we use the same pressure concept to cook our food too. Meanwhile, it takes a lot of time for the water to boil when not cooked in pressure. When the bullet leaves the nozzle of the gun with force, the gun handle pushes the gun man back due to recoil momentum.
